More healthy recipes

Ok, so my sweet mother-in-law sent me some of her healthy recipes and we really enjoyed them, so I will share them with you. One is a yummy soup (actually it is my sister-in-law's recipe, but my MIL sent it to me) and the other is a yummy dessert. The recipes make a large batch, so adjust as needed.

White Chili
4-6 chicken breasts (saute)
1-2 large onions (saute)
1-2 garlic cloves (saute with above)
salt and pepper
1-2 T dried basil leaves
2-4 T chili powder
1/4-1/2 tsp ground cloves
2 pound pkg Great Northern Beans (or use 2, 16 oz canned beans)
1-4 quarts chicken broth
Cover above ingredients with chicken broth and simmer.
Lemon juice to taste (I omitted)
Garnish with chopped tomatoes and sour cream, if desired. Serve with tortilla chips.

Carrot Cake
14 cups shredded, peeled carrots (5 lb bag)
1 cup sugar or raisin water or both
6 cups wheat flour
4 tsp baking soda
4 tsp cinammon
2 tsp salt
1 1/2 cups nuts
3 cups raisins (cover with water and boil. Save the raisin water and add to the mix, as whole grains require more liquid than white flour)
1 cup applesauce
8 eggs (I only used the whites for 6 of the eggs)
4 tsp vanilla
Add combined applesauce, eggs, and vanilla and mix by hand. Place mix into 2 large greased cookie sheets.
2 T sugar, sprinkled on top
Bake 30-45 minutes at 350 degrees or until done. Let cool. Needs no frosting, although fat-free cool whip tastes good with it too.
