Healthy recipes

Here are a few recipes we've tried as part of our eating more healthy plan. Thought you might enjoy them too! They come from a cookbook titled, "Lickety-Split Meals", by Zonya Foco, RD.

The Easiest Stir-Fry Ever
3/4 cup Unle Ben's whole-grain instant brown rice, dry
1 1/3 cups water
Place rice and water in a medium nonstick saucepan. Cover, bring to a boil and reduce heat to medium-low. Set timer for 5 minutes. When timer sounds, remove from heat and allow to sit, covered.
1 small onion
3 (4 oz each)skinless, boneless chicken breasts (opt.)
Meanwhile, cut onion into wedges and chicken into strips.
1 T Oil (canola or sesame)
Heat in a nonstick wok over medium-high heat. Add onion and chicken. Stir-fry until chicken is browned.
2 bags (16 oz each) frozen mixed stir-fry vegetables
Add to wok (no need to thaw). Cook 11-13 minutes to desired tenderness. (It's ready when the water from the vegetables evaporates.)
1 jar (10 oz) La Choy sweet and sour sauce
1/2 cup slivered almonds or chopped walnuts or cashews
Stir in. Let cook 2 more minutes, then serve over brown rice.

This really was a yummy stir fry, although I didn't use the whole bottle of sweet and sour sauce. It depends on how saucy you like it. Hope you enjoy!

Creamy Chicken Dijon over Noodles

1 T olive oil
1 tsp minced garlic (2 or 3 cloves)
1 lb skinless, boneless chicken breast strips
Saute 7-8 minutes over medium-high heat until chicken is no longer pink.
4 oz dry egg noodles, preferably whole wheat
Meanwhile, add to boiling water. Set timer for 6 minutes.
1 small bunch fresh asparagus
Meanwhile, wash asparagus. Snap off bottoms, cut diagonally into 1 1/2 inch slices and set aside.
1 can (7 oz each) mushrooms, drained
Add to chicken and cook 1 minute
1/4 cup Dijon mustard
1/2 cup Light sour cream or nonfat plain yogurt
Meanwhile, mix together in a 2-cup measuring cup. Add to bubbling chicken and mushrooms and heat only until hot throughout. When timer goes off, toss asparagus in with the bubbling noodles. Set timer for 2 minutes. At the sound of the timer, quickly drain. Serve the chicken over the noodles with asparagus.

We really liked this a lot too. It had a very nice flavor. We used the non-fat yogurt, so it might taste a little different with the sour cream. And we also didn't use as much mustard as it called for. That's the fun of recipes, you can switch them up according to your own tastes!

  1. I have tried a ton of her stuff. Have you seen her TV show on PBS? She is great. She talks about everything in moderation and small habits that can make a big difference in a years time.
