I got this recipe from a friend, so some of you may already have it if you read her blog. Anyways, these are really yummy! They aren't necessarily all that healthy, but it makes you feel a little better when you eat them because at least they have a veggie in them. :)
Zucchini Brownies:
1/2 cup oil (you may be able to use applesauce, but I haven't tried it)
1 1/2 cup sugar
2 tsp vanilla
2 cup flour (you may use 1 cup wheat flour and it won't change the flavor)
1/2 cup cocoa powder
1 1/2 tsp baking soda
1 tsp salt
2 cup zucchini
Mix ingredients together. The mix will be really dry (no, it doesn't have any eggs, that's not a typo. Almost all the moisture comes from the zucchini). Pour into a greased 9 x 13 pan. Bake at 350 for 25-30 minutes.
Frosting:
6 T cocoa powder
1/4 cup butter
2 cup powdered sugar
1/4 cup milk
1/2 tsp vanilla
Melt the butter and add cocoa powder. Add the other ingredients and wait for the frosting to cool completely before frosting the brownies.
